Gigante Bean Tomato Soup

Canned beans are the star of the show here, yes I know what I said. The good thing about bean recipes they are pretty flexible. So if you can’t find gigante beans, you can easily substitute them for cannellini, great northern, or even butter beans. Any bean would go great in this recipe, I chose gigante beans because of their creaminess and heartiness which goes perfectly in soup. Good Soup.

Tomato soup is my jam, and this gigante bean tomato soup is perfectly creamy and hearty. Made with a few simple ingredients you can have this soup ready to go in less than an hour, here is what you’ll need.

  • Gigante Beans
  • Garlic
  • Heavy Cream
  • Whole Peeled Tomatoes
  • Tomato Paste
  • Parsley
  • White Wine
  • Red Pepper Flakes (optional)
  • Chicken Stock (substitute vegetable stock to make it vegan!)
  • Bay Leaves
  • Extra Virgin Olive Oil

How to make your tomato soup thick and creamy? 

The trick I use in this recipe to get a wonderfully thick soup is to add some canned tomatoes, broth, and gigante beans to a blender. Once creamy add it back into your soup and this will act as a thickener. Making your soup dreamy and creamy.

What to serve this gigante bean tomato soup with? 

In my opinion, this soup is perfect on its own. But I’ll admit that half of the charm of soup is being able to dip something into it. Here are a few ideas:

  • Crusty bread: A no brainer
  • Parmesan Cheese: The perfect topping to pair with this soup
  • Grilled Cheese: The obvious accompaniment to tomato soup. If you’re looking for an even more filling meal this will do the trick.
  • Crackers: Much like how you would add oyster crackers to clam chowder. Saltine crackers or any other type of cracker would go great with this.

Ingredients
 

  • 1 can gigante beans
  • 2 cans whole peeled san marzano tomatoes
  • 1 medium onion (thinly sliced)
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • parsley (chopped – as needed)
  • 2 tbsp white wine
  • 5 sprigs of thyme
  • ½ tsp red pepper flakes (optional)
  • 3 cups chicken stock
  • salt (to taste)
  • ¼ cup heavy cream

Instructions
 

  • Heat a stock pot or large pot over medium heat and add olive oil, onion, thyme, red pepper flakes, garlic, salt, and a bay leaf. Cook until the onions are translucent.
  • Pour in white wine and let it reduce. Add tomato paste and cook until caramelized.
  • Add canned tomatoes, chicken stock, and canned beans. Let it cook for 20 minutes.
  • Remove the bay leaf and other aromatics. Take about 1 cup of the soup and beans and blend in a blender until smooth and creamy.
  • Take off heat and pour the blended mixture back into the pot and stir in heavy cream.
  • Ladle the soup into bowls and top with chopped parsley and a drizzle of olive oil. Enjoy!
