So we’ve all had the regular sweet oatmeal but have you ever had, Savory Oatmeal? Well if you haven’t buckle up because you are in for a full ride to flavor town… Yes I know I said flavor town, and I’m sticking to it.
This simple dish is sure to revolutionize your breakfast by adding a bit of excitement and intrigue. Topped with sautéed mushrooms, soy glazed spam, crispy fried shallots, green onions, and an over-easy egg, this savory oatmeal will keep being sure to satisfy both your cravings and taste buds. Ingredients for savory oatmeal
The base of savory oatmeal is extremely simple. You only need two ingredients rolled oats and chicken stock. But we are above being boring so of course we need toppings for this bad boy. Here are the ingredients I used for my savory oats.

- garlic
- shallots
- mushrooms
- eggs
- spam
- chili oil
- brown sugar
- soy sauce
- mirin
- sesame oil

Savory Oatmeal
Ingredients
Savory Oatmeal
- 1 cup rolled oats
- 1 ¾ cup chicken broth (or water)
- 1 tbsp soy sauce (1)
- 1 green onion stalk
- 1" chunk of ginger
- 2 cloves garlic
- 1 shallot
- 1 tsp soy sauce (2)
- ¼ cup vegetable oil
- 1 tbsp gochujang
- 1 tsp garlic powder
- 1 tsp salt
- 1 egg
- 4 mushrooms (of choice)
- 1 tsp chili oil (optional)
- 1 tsp butter
- 2 slices of spam
Soy Glaze (for spam)
- 2 tbsp brown sugar
- 2 tbsp soy sauce (3)
- 1 tbsp mirin
- 1 tsp sesame oil
Instructions
- Add brown sugar, soy sauce (3), mirin, and sesame oil to a saucepan and cook until it bubbles. Set aside and allow to cool.
- Add butter to a sauté pan with mushrooms. Sauté for a few minutes until they start to get a little bit of color then add soy sauce. Sauté for another minute and set aside.
- Thinly slice shallots crosswise into rings. Place shallots in a medium saucepan with oil. Set over medium-low heat and cook, stirring often, until shallots are golden brown, about 10 minutes. Add shallots to a paper-lined plate to drain excess oil. Sprinkle with salt.
- Add oil to a pan with slices of spam, and cook until seared. Add in a soy glaze and cook for about 1 minute. Remove from heat and set aside.
- Mince garlic and ginger and add to a medium pot with oil. Cook until it begins to crisp. Add chicken stock at medium heat until it begins to boil. Add rolled oats, soy sauce (1), garlic powder, salt, and gochujang.
- Allow it to return to a boil, then reduce the heat to medium-low. Let the oats simmer for about 5 minutes, or until thickened.
- While simmering, chop green onions and fry an egg to your liking. Remove oats from heat and top with soy-glazed spam, crispy fried shallots, sauteéd mushrooms, egg, and green onions. Taste and add salt to your liking, and top with chili oil.
