Chocolate Chip Zucchini Bread
Ingredients
- 1 ½ cups grated zucchinni (packed (about 2 medium zucchini's))
- ½ cup granulated sugar
- ½ cup light brown sugar
- ½ cup grapeseed oil (or oil of choice)
- 2 eggs (room temperature)
- 1 tsp vanilla extract
- 1 ½ cups all purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup pecans
- ½ cup chocolate chips
- ½ cup greek yogurt
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, add the eggs, light brown sugar, and granulated sugar. Mix together until combined and the mixture becomes slightly foamy.
- Grate the zucchini and add it to the egg mixture, along with grapeseed oil and Greek yogurt. Mix until everything is well combined.
