Ingredients
 

  • 1 ½ cups grated zucchinni (packed (about 2 medium zucchini's))
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ½ cup grapeseed oil (or oil of choice)
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 ½ cups all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup pecans
  • ½ cup chocolate chips
  • ½ cup greek yogurt

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large bowl, add the eggs, light brown sugar, and granulated sugar. Mix together until combined and the mixture becomes slightly foamy.
  • Grate the zucchini and add it to the egg mixture, along with grapeseed oil and Greek yogurt. Mix until everything is well combined.
  • In a separate bowl, sift together the flour, salt, baking powder, and baking soda. Then, add in the ground cinnamon, chocolate chips, and pecans. Mix until well combined.
  • Add the dry ingredients to the wet ingredients and mix everything together until the flour is no longer visible.
  • Line a 9×5 inch loaf pan with parchment paper and spray it with non-stick cooking spray. Then, pour in the chocolate chip zucchini bread mixture.
  • Bake the bread for 1 hour, or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 15 minutes before removing and slicing. Enjoy!
