Baked Oatmeal Bars

These baked oatmeal bars are a healthy and delicious snack or breakfast option. Packed with fiber-rich oats, bananas, and nuts, and topped with a chocolatey drizzle, they are easy to make and store. Plus, they are gluten-free and dairy-free.

Ingredients
 

  • 1 egg
  • 2 cups rolled oats
  • 1 cup almond meal (or oat flour (blended rolled oats))
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ cup molasses
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 banana (mashed up)
  • 2 tbsp honey
  • ¼ cup coconut oil
  • 1 tbsp peanut butter (creamy)
  • ½ cup chocolate chips
  • 2 tbsp brown sugar
  • ¼ cup cashews (chopped)

Chocolate Drizzle

  • ¼ cup chocolate chips
  • ½ tbsp coconut oil

Instructions
 

  • Preheat your oven to 350°F (175°C)
  • In a bowl, mash the banana and add in the egg, honey, coconut oil, vanilla extract, molasses, and peanut butter. Mix until everything is well combined.
  • In a separate bowl, add the oats, almond meal, brown sugar, cinnamon, and nutmeg, along with chopped cashews.
  • Combine the banana mixture into the dry ingredients and mix until everything is well combined. Fold in the chocolate chips.
  • Pour the mixture into a parchment-lined baking sheet and bake for 30 minutes or until golden brown. Once done, allow the bars to cool before cutting them into even-sized pieces.
  • While the bars are baking, prepare your chocolate drizzle. Melt chocolate chips with coconut oil in the microwave until smooth.
  • Once the bars have cooled, drizzle the melted chocolate mixture over them.
